Suzhou Style Warm Pot 苏式暖锅

Upon entering winter, almost all households in Suzhou have one to two warm pots made by beating copper sheet with a chimney in the center which is also the hearth, there is a round hole in the center of the pot cover to pass the chimney and cover the pot.

Different from other style hot pots, Suzhou style warm pot is used to put the semi-finished dishes into the soup-stock;the furnace fire can not only keep warm but can also heat the fresh vegetable. There is a very nice name for the warm pot as “Stewed Assorted Delicacies”.

Egg dumplings and water chestnuts are considered as the shoe-shaped gold and silver ingots; soybean sprouts as the Ruyi dish; the green vegetable as peace vegetable, together with meat stuffed gluten symbolizing reunion … the bacon refreshes the dish, while the abalone brings more fresh taste.

In winter, when the family sit around table and have dishes from the warm pot, it’s really very warm and sweet.
