Menghe eel silk noodles are the most famous in Changzhou. In menghe, there is a “Ba Jin Noodle House”, whose production skill of eel silk noodles has been listed as “the intangible cultural heritage of Changzhou New North District”. This small noodle house is named Ba Jin Noodle House, because the owner’s nickname is called Ba Jin.

Every morning, there are a lot of customers in the noodle house, and many of them come from the urban area or even further away. Although the noodle house is not large and can only hold two tables, but in the morning, more than 200 bowls of noodles can be sold in the house, and many customers can only stand and wait.

The owner of Bajin Noodle restaurant is Chaosong Qing and his wife. According to the introduction of Chao Songqing, Menghe eel silk noodles is handed down from Kangxi years, with more than 300 years of history. Compared with the previous practice, eel noodles have been improved, the key is to use eel bones, pig bones, etc. to remove the smell, then boil soup. During this time, more than a dozen ingredients and seasonings are added, usually taking three hours to cook.

The milky soup is fragrant and mellow. Cut the wild eels into filaments, fry them and cook them into eel filaments, fine but strong. Sprinkle some pepper before eating, a mouthful of noodles, a mouthful of soup, this is the taste of the old Menghe.
