Taoyuan Town of Wujiang District specializes in braised mutton from the lake area. After various spices and seasonings are sizzled in the iron pot, different ingredients, such as lamb shanks, bones, stomachs, legs and chops, are successively added and simmered for three hours. After the mutton is dished out, it is cut into small pieces with a pair of scissors.
