Changzhou Shrimp Cake 常州虾饼

Shrimp cake is a delicacy, its’ main ingredients include raw shrimp meat, flour and so on. It is originally popular in the south of the Yangtze River, shrimp cake is best known as the characteristic traditional snack of Changzhou City, Jiangsu Province. In Changzhou, the shape of the shrimp cakes is similar to a drum, therefore, it is also called “copper drum cakes”. Shrimp cake has a history of nearly 200 years. Yuan Mei, an author in Qing dynasty, states in his “Garden Food List”: “shrimp cake, raw shrimp meat, green onions, salt, pepper, a little sweet wine, add water, flour, and burn through with seasame oil.” The color is golden, the outside is crispy and the inside is soft, the smell is fragrant and the taste is delicious.
