Emerald Shaomai 翡翠烧麦

Emerald Shaomai is a local traditional famous dish in Jiangsu, and one of the two marvelous desserts in Yangzhou. With thin skin and green filling, its color is just emerald, the sugar and oil in makes you feel pleasant, and it tastes sweet and fragrant.

Practice:

Ingredients: wheat flour, Chinese cabbage, ham, white sugar, dietary alkali, salt, lard oil, seasame oil, water

1. Put water in the pot, boil the water and then put the dietary alkali into the pot. Blanch the leaves of Chinese cabbages and put them into cold water for soaking.

2. Dry the water with gauze, cut them into pieces and then dry the water with gauze again;

3. Add 2 grams of salt, 150 grams of white sugar, 150 grams of lard oil and 15 grams of sesame oil to mix with 500 grams of vegetables, and put them in the refrigerator for cold storage for 15 minutes;

4. Divide the prepared dough into dough formulations, roll it to be like the hem of pleated skirt, and put proper amount of fillings into the skin and pack it to make the Shaomai;

5. Sprinkle with a little ham and steam for 8 minutes.
