Its history can date back to at least middle Qing Dynasty, and it has lasted for well over three centuries.

This is a traditional local specialty. Well-cooked Pot-lid Noodle is neither too hard nor too soft. Its flexibility is proper, and it is good for all the ages. People use four words to describe authentic Pot-lid Noodle: Weird, nice, tasty, and good-looking. It is weird as the cover lid is boiled together in the noodle pot; it is nice for the quality of flour powder; its tasty flavor comes from the seasoning of the soup as there are in fact two kinds of soups, the red one and the white one; the beauty comes from the toppings over the noodle. With all due processes, the fragrance of oil, noodle and seasonings are well combined to deliver alluring aroma that can spread everywhere. The hot noodle is dotted with green and red toppings. The tasty and refreshing noodle can offer the experience that is equivalent to a feast. Pot-lid Noodle really offers a bit of Zhenjiang Cuisine culture.
